Good Housekeeping Say goodbye to pans that peel, blister, scratch or wear out over time.  This 10 inch skillet from Sitram is made of a permanent, stick resistant alloy that is more durable than steel.  The skillet resists temperatures of more that 1800°, and can be washed in the dishwasher.  5 Winners.

Tasted & Tested.  Cybernox stick-resistant pan is indestructible.  I was immediately taken with the Cybernox frying pan's sleek shiny, chrome-like surface.  Although the cooking surface appears to be no different from the rest of the pan, it's actually a high-tech stick-resistant hard metal alloy that's fused to the heavy duty stainless steel of the pan.  The advantages over traditional nonstick surfaces are enormous.

Instead of a coating, Sitram's Cybernox is made from a stick-resistant, stainless steel alloy.  Though expensive, Cybernox can be used with metal utensils and can be cleaned with abrasives unlike nonstick skillets

The type of skillet you buy depends on your needs.  Sitram, St. Benoit Du Sault, makes a sauté pan with straight sides, built for accommodating dishes like ragouts and stews.  The Collectivite skillet by Sitram,  is a larger 28 centimeter skillet with a small helper handle.

*Cybernox items do not share the same cooking qualities as Teflon- they are stick-resistant, rather than nonstick
