Although the cooking surface appears to be no different from the
rest of the pan, it's actually a high-tech stick-resistant hard

Instead
of a coating, Sitram's Cybernox is made from a stick-resistant,
stainless steel alloy. Though expensive, Cybernox can be used
with metal utensils and can be cleaned with abrasives unlike
nonstick skillets The
type of skillet you buy depends on your needs. Sitram, St.
Benoit Du Sault, makes a sauté pan with straight sides, built for
accommodating dishes like ragouts and stews. The Collectivite skillet by Sitram, is a larger 28 centimeter
skillet with a small helper handle.
